  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  2. Heat olive oil in a large pot over medium heat. Sauté onions and garlic until fragrant and translucent (about 3-4 minutes).
  3. Add diced carrots and celery; sauté until slightly softened (about 5 minutes).
  4. Stir in lentils, cumin, and paprika; cook for about 1 minute.
  5. Pour in vegetable broth; bring to a boil then reduce heat to low. Simmer for 25-30 minutes until lentils are tender.
  6. Stir in lemon juice; season with salt and pepper to taste before serving hot.
